i understand what the amount of students online is for in each subject but what does the number of students mean in general?

    Correct. It's the number of students who have studied the subject; currently, that just means who have ever visited the subject page. We're working on making that a little higher threshold, as in you're not `studying' a topic unless you've actually posted a question in the group.
