Euler is the one who the symbol e is named for. By "e" I mean the base of the natural logarithm ln of course. Goedel proved that mathematics cannot be both consistent and complete. In other words, there will always be unprovable truths within mathematics, no matter how it is formulated.

Then I would suggest Euclid He came up with the basic rules of geometry, and you can probably grasp his ideas more easily than those of others mentioned.
