contour farming is the answer. when you plant the crops in row, you slow the runoff of water and topsoil after heavy rains. and the most important thing is, plant roots hold the soil together. they prevent the water to move soil particles by using it or letting it to flow through the root channels without any intervention to soil profile. that's the point.
