i am pretty sure (since amistre seconded it) that the answer is what i wrote or maybe \[5\overrightarrow{e_1}+8\overrightarrow{e_2}\] or even \[5(1,0)+8(0,1)\]

The answer I got was Vx (5,0) Vy (0,8) I'm not sure how correct that is, but judging from the vague explanation in my book, it seems like it might be correct.

it is. it says in a way that the component in X is 5,0 and in Y is 0,8 adding both you get (5,8)
