More land gives more opportunities to spread out and industrialize
It depends on where in the west you want to end up. If you moved to California during the 1850s, then likely you're seeking gold. Silver was discovered in neighboring Nevada sometime later I think. So people moved to Nevada for that reason. If you moved to the oregon territory, then you probably are there for timber. Or if you moved to a state like Nebraska, then you're there to get your own piece of land to farm (wheat maybe). There was also the cattle drive and buffalo hunting.
There are many other reasons why people moved out west. Some did it for money, while others did it to start a new life full of adventure. There are probably tons of other reasons too.
